How to Make Carrot Cake Doughnuts

Makes 18 large doughnuts.
Doughnuts
1/2 cup butter, softened1 egg1/2 teaspoon salt1/2 teaspoon vanilla2/3 cup brown sugar2/3 cup vanilla yogurt2/3 cup crushed pineapple, drained (reserve juice)2/3 cup shredded carrots2 teaspoons cinnamon1/2 teaspoon nutmeg1 1/2 teaspoons baking powder1 1/2 teaspoons baking soda2 cups flour
Frosting
4 ounces cream cheese4 tablespoons butter2 tablespoons pineapple juice (from the reserved drained juice)3/4 cup powdered sugar1/2 cup chopped walnuts
Edit Steps1Preheat the oven to 375°F (190°C).


Part One: Making the Batter1Mix the wet ingredients. In a large bowl, beat the sugar and butter with a stand or hand mixer.

2Incorporate the yogurt, egg, and vanilla into the bowl.

3Add the pineapple and carrots last. Mix everything thoroughly.

4Mix the dry ingredients. Use a medium bowl to combine the cinnamon, flour, baking soda, baking powder, salt, and nutmeg with a metal wire whisk.

5Incorporate the two bowls. Sift the dry ingredients into the wet ingredient bowl.

For the best results and easier stirring, sift a small amount at a time between stirring.
Part Two: Baking the Doughnuts1Fill a doughnut pan. Add the batter to the cavities of the pan, about 1/2 full.

2Bake the doughnuts for 10 minutes.

3Allow the doughnuts to cool. Leave them in the pan for a few minutes.

4Transfer the doughnuts to a wire cooling rack. Set aside for about 15 to 20 minutes.


Part Three: Making and Applying the Frosting1Combine the frosting ingredients together (except the walnuts). In a small bowl, use a metal wire whisk to whip everything thoroughly until you achieve a smooth mixture.

2Dip the doughnuts into the frosting.

3Garnish the doughnuts. Before the frosting sets, sprinkle some chopped walnuts around.
