How to Make Strawberry Quick Bread Coffeecake

Yields one 9" x 9", or 23cm x 23cm cake
Edit Ingredients2 cups all purpose/plain flour1 cup sugar3 tsp baking powder1/3 cup softened butter1 egg1 cup milkStrawberry jam (enough to make 3-4 rows on the batter)Whipped cream (optional)Fresh strawberries (optional)

Preparation1Preheat oven to 350ºF/180ºC.


Making the Batter1Sift together flour, sugar, baking powder, and salt.

2Add in the butter, egg, and milk.

3Beat hard for two minutes. As this mixture will be quite thick, it's preferable to use an electric mixer.

4Grease a 9x9"/23x23cm pan with baking spray, softened butter, or coconut oil. Pour in the batter.

5Spoon 3-4 rows of strawberry jam onto the batter. Using a table knife, make lines perpendicular to the lines of jam.


Baking and Serving the Cake1Bake for 45 minutes, and a bit longer if needed.

2Serve with whipped cream and fresh berries (optional).


Edit TipsIf you'd rather not have it be a strawberry coffeecake, then you can use a different fruit jam (or even canned fruit) as a substitute.
